The global trade in kosher food is increasing annually. According to a report by New York-based Kosher Industry Consultants (IMC), in 2003, approximately 10,000 companies in the United States produced nearly 75,000 kosher food products, with nearly 3,000 new kosher-certified products entering the market annually. According to the American Consumer Information Corporation, 90% of products in the US processed food market are kosher-certified.
